My little cooking companion

A very big hai to everyone who are following my blog posts. Today let’s learn along with Innus. Iniya was born in Germany and we lived in a 40 sqm room or appartment. The room had a living cum kitchen so we ought to be in this room for cooking and for Skype gathering. All these made innus to grow along cooking.

That’s how she joins me on cooking, if she needs a closer look she accompanies me on sling.

When she was about to one year old I just give her an onion to peel. She just sits on counter top and monitors me.

Cheesy beef noodles with eggs

A very big hai to everyone who are following my blog posts. Today let’s try a unique dish and am extremely sorry for those who don’t have beef in their food chart. 

             From Iniya’s birthday (2018), we have tried various dishes, since our appointments were filled for Reno and Richie who joined us from Chennai. We not only had fun-filled kitchen, we had photo sessions too. Today we tried a unique dish with noodles. Before explaining the making of the dish, let’s enjoy some fun-filled memories. Yes, my first experiment on noodles.  

            It was during my high school holidays I was with my maternal grand parents in our ancestral home. Since my grandpa was from judicial department, we could feel the silence in our home. Though we had maids for help, my grandma was head of the kitchen. Ours duty was to enjoy home-made meals between our fun-time. During that holiday i tried many dishes and they failed with something from taste to texture.  But making of noodles and those events followed after cooking were my turning points of cooking. Though I did all the procedure for egg noodles it ended up messy. I restricted in presenting the noodles to my grandpa who was waiting, with banana leaf and he compelled me to give him a plate. With much fear I gave him a plate noodles, instead of firing, he enjoyed the dish, along with fun-filled chats. That’s how my grandpa was, he just wiped away my fear of cooking and suggested ideas for improving. From there my cooking experiments started. Ok, let’s move on to today’s topic.

Cheesy beef noodles with eggs

Ingredients

  1. Noodles
  2. Beef
  3. Egg
  4. Cheese
  5. Onion
  6. Tomato
  7. Salt
  8. Masala(chilli, turmeric, coriander, pepper)
  9. Ginger and garlic

The making of involves three different process.

Step 1.  Boiling noodles

Boil water to high temperature, then add a pinch of salt, reduce the flame to half and then add noodles. When noodles reach the required texture, drain water and wash the noodles in cold water. Place it aside. The same process is applied for pasta too. This prevents them from being sticky.

Step 2. Beef preparation

Cut beef into small pieces and be sure, the pieces are free from bones. In a pressure cooker add the following, Beef, ginger, garlic, a pinch of turmeric, a pinch of salt and pepper. Add some water since the beef should be dry or free from water after cooking. When it gets cool, grind them in a mixer.

Step 3. Making Masala.

  1. In a sauce pan, free from nonstick, pour some oil and add spices.
  2. Add ginger garlic paste and saute them.
  3. Then add onion and a little salt and saute them.
  4. Then add tomato and saute them.
  5. Add egg and saute them till it gets fried and add cheese if needed.
  6. Once it gets cooked remove a portion of egg and keep them aside.
  7. Add Masala and saute them in the remaining portion of egg.
  8. Once it gets cooked, add noodles, beef, and the remaining portion of egg, mix them well.
  9. When it gets mixed well serve them.

Fingerfoods the best idea I found for Innus

A very big hai to everyone who are following my blog posts. Today let’s have a look on some Finger foods I tried for Innus to ease her intake.

Hope you all have seen people running behind their children during feeding since they play tantrums for eating. Since I felt that scene as torturing kids and thereby bringing food aversion, I had a strong decision not to run behind Innus for her diet. In order to make her have her balanced diet, I planned to make her diet unique so that she eats well. First and foremost thing we tried is that, I allowed her to taste our Indian dishes very early and allowed her to eat on her own. We used to keep an eye on her when she eats on her own  to avoid chocking and on her intake. You can have a look on how she eats from the link below.

For example, if I fry salmon, I used to give her some pieces one by one before her proper feed starts. This keeps herself busy with finger foods and meanwhile I could complete cooking. That’s when I understood the value of finger foods and I aim on cooking finger foods a lot to keep her busy while cooking and gradually she learnt how to eat. Then comes the point messy She eats without making the room messy which she learnt from the first day of introducing foods and thereby helping me to concentrate on cooking her favourites…. Blend of advent and Indian dish

A very big hai to everyone who are following my blog posts. Hope you all read the previous post on schokoladen festival– the festival of handmade chococlates. Soon I received texts from my friends wishing me as it blended the two festivals. So I decided to update the next post which is similar to the previous one.

Since the advent is nearing, we can travel through our advent days in Tübingen. During our stay in Germany we attended the Dietrich Bonhoeffer Kirche, where normal services are in Deutsch and an English service once in a month, which is followed by potluck dinner. Whenever I hear the term potluck dinner, I remember our first day in church. The day on which I had the lasagne, for the first time. Till my delivery I was unable to prepare anything for potluck dinner. So I tried Sarkarai pongal for the first time after Iniya was born, and I got acceptance from people around the globe.

For people in India preparing  Sambhar and idly is nothing, for us it like experiments in a chemistry lab. For  the idly batter we need to grind two different rice( langkornreis and parboiledreis) in a proportion and urid dal from getgrocery.

For Sambhar, we get toor dal from getgrocery and masala prepared from India. For vegetables, we ought to check for the available ones. I used to prepare ghee in home, so its homemade.

The service was over and the dinner was displayed on a table. We maintained silence to have the surprise. Our pastor took an idly and Sambhar in a bowl and had it with a spoon, praising the dish. My mind voice said… “Hurrah you passed the exam”.  Yes, they loved the dishes.

Home made ice creams for a unique touch

A very big hai to everyone who are following my blog posts. Through today’s posts we are going to time travel to my childhood days in Irenipuram.

 

Whenever summer arrives my mom fills the freezer with homemade ice creams to beat  the summer. Because of its unique flavour, we used to ask the trace of the recipe, and she replies a place in Tamil Nadu. The same thing happened for this and the place was Salem. Thanks to my grandpa for serving throughout Tamil Nadu, so that mom and grandma serves us with dishes from various places. Whenever we want a dish, mom or grandma will serve them, making us to stick in kitchen than hotels.

As you all know I used to cook based on taste and not on measurements. The following is a base for the ingredients.

Ingredients.

1 litre milk (try to skim the milk for perfection, if it’s % marked do have the highest %milk )

3 eggs

Gelatin

Sugar for taste (taste varies based on brand )

Procedure

Mix two to three spoons of gelatin in warm water till it gets dissolved.

Meanwhile skim the milk and allow it to cool down below room temperature.

Mix egg gradually in luke warm milk.

Add sugar for taste and mix well.

Then add the gelatin gradually and mix well.

Then keep the mixture to freeze, when it starts to crystalline, beat the mixture well with the help of beater or mixer. Then freeze the beaten mixture.

When it gets ready serve them with homemade jelly for a unique touch.

Festival of lights versus festival of sweets

 

A very big hai to everyone who are following my blog posts. Today we are going to travel from India to Germany or vice versa.

We can do a small comparison on two different festival of sweets to travel, they are Diwali and schokoladen festival. Diwali, the festival of lights is also famous for its various types of sweets. The festival makes me to travel to my childhood days, when my dad served in City Union Bank at Trinelveli. We used to receive huge collection of sweets which fills our pantry for the whole month. Of which Iruttukadai Halwa was my favourite one. Because of its speciality we had them as a dish for our wedding, traveling all the way from Trinelveli to Thuckalay.

During our stay I missed those sweets and tried to cook them and I have updated the making of halwa in my previous post, which can be reached by clicking on the pic above.

I have seen so many people posting Ritter Sport chocolates, but for me it was just a chocolate. I remember the day, I was welcomed with three kilograms of Ritter Sport chocolates. After my daughter’s birth I was supposed to attend a birthday function in Tübingen, while in India we ought to wait for 40 days after delivery to go out and we should attend the church service for the first time as a customary. So we planned to attend a service and the pic below was from our first day out to church. Though it is ok to go out before 40 days, now I feel bad since it will degrade our health for a long term. So now I used to advise everyone not to be more intelligent and be stick on to the traditions.

Since I had the condition of #hyperemesis_gravidarum I was unable to go out during my pregnancy. If you are not aware of the term #hyperemesis_gravidarum do check my previous posts. To my surprise, the festival of schokoladen was about to start and we were planning to visit Münster. Since it is one of the unique festival we attended on a sat eve and had the hot chocolate after a walk through the cobbled streets.

After eight months of stay in Germany I came to know that Drogerie Markt is near Nonnenhaus. Though I havnt had the complete visit I was able to buy chocolates for my family in India. Yes, the famous Ritter Sport.

The festival is for the handmade chocolates and I was in the land of chocolates….I remember writing down my wishes for the first time when I was in school. One among those was “to sink in the ocean of chocolates” as in the movie Willy Wonka and chocolate factory. Yes, I was amazed to see those hot chocolates getting ready as a fountain. Those handcrafted chocolates are an eye catching view.

Finally I could strike down my checklist without planning. Yes, people used to plan a lot for accomplishing their wishes. Mine were heard by God alone and gradually it gets accomplished. A few more were stricken off without planning…wait till I update them.
