The coconut curry is one of the most common curry in our district – Kanyakumari, the southern most tip of India.
The version followed in our native is quite different, especially the fresh coconut is used in the curry. Since its hard to find the ingredients in Germany I altered the curry with the available ingredients so that it results in the exact taste….
The edited version of curry needs the following ingredients.
Oil (no specific oil., the oil which you prefer, I have tried in sunflower oil, olive oil and coconut oil.)
Mustard (I use a little more as it has more iron)
Onion (a cup- we get white coloured onion, to get the flavour cut them as cubes)
Tomato (a cup – same as onion…in cubes)
Salt needed should be separated as two portion. One portion should be added during saute of onion and tomato. This will make the onion to get sauted soon.
Masala(chilli, turmeric, coriander for taste) It should be sauted with the onion and tomato.
Coconut (homemade dried coconut)
Water as required.
The curry suites with fish fry. Since I had a little one, I used to combjne the main course with her finger foods.
Am quite specific with the intake of the ingredients. So to avoid removing the ingredients while consuming, I just saute till it gets smashed..
