A very big hai to everyone who are following my blog posts……Its been very long since I planned to use this wonderful coffee maker which flew all the way from Europe on our big day. If am not wrong it was from his Indian friend from France gifted this amazing pot.

And its our love for tasting the best coffee made me to try this amazing pot from the brand Bialetti… I guess you all have a doubt on the word Bialetti. Lets have a small look about the word and come back to make the beautiful coffee shot….

The Moka coffee pot can be used on stove or electric based on the model. The technique behind the pot in making the coffee, is passing boiling water pressurised by steam through ground coffee which results in the brewing of the coffee.

This amazing pot was invented by an Italian engineer by name Alfonso Bialetti in 1933 which become one of the staples of Italy and was named after the Yemeni city of Mocha. Now the Bialetti Industries is making the pot under the name Moka Express. Thats all about the pot and lets start brewing the coffee..

A very big hai to everyone who are following my blog posts. Hope you are all doing good during this lock down period. Though Covid is a pandemic, it is making us to be creative in all the ways we can. Today, being a Kanyakumarian lets try our hands on sea food. The dish was taught by my aunt during our visit to her home and here is a small glimpse of our travel.

Kanyakumari, being surrounded by sea in all the three sides of the district, we are more addicted to fish than any other non veg. A variety of fish is a staple food of our district, like potato and carrots in Germany. The following video is one of the famous dish, from our German diaries which was introduced to us by our friends in church. Check out the video to know how its all made, resulting in one of the best food for toddlers.

Last week we tried, making a special, using prawns. For people who haven’t went through the post here is the link to that post. Have a look on the post if you are new to the site and enjoy cooking.

Lets start the making of prawn curry. For the curry we need the following ingredients.

For Marination.

Thanks to the website www.yourorder.org for the home delivery of fresh prawns during the pandemic.

1kg ரால் – Medium Size Prawn
Link to order online for the fishes.

Marinate the cleaned prawns by adding the above ingredients in the picture. Keep it aside for sometime for the prawns to get marinated. Meanwhile we can start cooking.

To make curry add oil in a pan and then add spices, add ginger garlic paste and saute them. Adding ginger garlic paste before onion gives a better aroma for the dish. Then add onion and saute them till it becomes golden brown. After which add tomatoes and saute them. Before adding prawns, add tamarind puree, and then add prawns. Cook until it becomes soft.

Serve them with Rice, Chappati or bread. It goes well with any main course.

Cooking Diaries…Iniyaworld lifestyle: our experiments

A very big hai to everyone who are following my blog posts. Today let’s have a small rewind of our cooking diaries, with my little cooking companion.

Whenever I rewind my cooking diaries I could remember the first unique dish in my cooking experiment is the BREAD CURRY…..in which I tried replacing bread slices in a chicken curry…..after which the best learning from my cooking diaries is the making of noodles…. Making of noodles! Yes, the dish made me to learn that when numerous ideas pop up from the environment will end up in damaging the dish and when we praise the flop dish the cook will become an expert…… From there my journey of cooking experiments started……and it was on July 1 2015 I was sent into the cooking lab to do experiments with limited ingredients. For those who are following my blog posts are familiar that I won’t cook with a weighing scale….. my first tug up war was with the hot plate…. Since my granny keeps on insisting clean kitchen even during cooking, I hate the spill of ingredients around the hot plate. But it took my brain to figure out a way there by I avoided the spill of milk and so on….. The next biggest challenge was dehydration since I was unfamiliar with the proper functioning of hot plate and my hyperemesis gravidarum condition resulted in fainting down…..when making tea. That’s when my gynaec scolded me to drink 3 litres of water daily….for the condition HG it’s like climbing the Himalayas daily….. From there the main cooking battle starts…..

When I was given the only option to use hot plate, I had to find the best way to stay safe……yes, I can handle the hot plate for 5 mins and within which I should do something and step out for 5 mins to avoid dehydration.. and moreover to handle HG without hospitalization our experiments are based on limited intake with high calories,even then I lost around 15 kg…..

I remember trying this on 2015 feb 24 and that became a frequent dish after biryani….. it was on one fine day during a potluck I was teased stating I am good at desserts……from there I challenged myself.

A very big hai to everyone. after a long time we tried something unique from our kitchen. And here is the small update from our kitchen. After Okhi we had to remove the jackfruit trees planted around our home because of the damage caused by them and it took a long time for this tree to give us the yield. There are so many varieties of jackfruit and this variety is sweeter than the other varieties which were in our home and this escaped Okhi.

Jackfruit being found in the Southern part of India are rich in Vitamin c, Potassium, dietary fibre, and other important minerals and vitamins. Jackfruits being very huge in size and its nature of ripening will compel us to consume the fruit very fast, but we can’t. So its better to try some unique dishes to reduce the wastage of the valuable fruit. I remember my childhood days when my granny keeps on giving them to our neighbours to avoid wastage. Today to be safe from lockdown, here we are with a unique dish, Jackfruit cake.

Ingredients

  • butter
  • jackfruit
  • eggs
  • sugar and maida
  • food colour and flavour
Ingredients used

Lets have a look on the ingredients.

  • unsalted butter (50 gm)
  • eggs (2)
  • jackfruit (1/2 cup)
  • maida (1/2 cup)
  • sugar (1/4 cup)
  • baking soda and baking powder (1 egg spoon each)
  • food colour as needed
  • vanilla essence if needed.

Steps to be carried out

  • beat butter
  • add eggs/ beat them
  • add sugar / flour / baking powder/ baking soda/ mix them
  • add jackfruit
  • grease the pan
  • bake
  • fluffy jack fruit cake

Follow the steps as in the pic

  • beat butter till soft.
  • beat eggs by adding one by one.
  • add essence and color.
  • add the dry ingredients and mix them.
  • preheat the oven in 180 degrees and bake for 20 mins.

After baking, cool the cake and serve them with or without icing.

Hurrah, it’s October.

Yes, the month of Oktoberfest in Germany during which our princess was born in Germany. So its a tradition for us to celebrate her birthday throughout the month of October and here is our 2019 celeb. When we decided to celebrate her bday, her uncle came all the way from Chennai and surprised her this year. So we planned something. unique for her birthday to be remembered

Here, we are gonna reveal the type of cake which we decided to bake for #innus to have a unique blast. Yes, we decided to bake dragon fruit cake. Since its unavailable online we combined some basic baking techniques and my own measurements to have a unique blast.

Ingredients

Homemade ghee to give a perfect aroma for Indian dishes
Home made ghee to add more aroma
  • 1 1/2 Cup flour
  • 3/4 Cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 100 gm unsalted butter
  • Dragon fruit smash 1 cup
  • 2 eggs

Method

Beat butter to soft silky texture and add egg one by one. Beat them and then add sugar part by part. Beat them to form a silky texture. Add flour, and then add baking powder and soda. Beat them and add the fruit pulp. Pre heat oven at 160-180 degree Celsius. Pour batter in a greased plate and then bake for 20 mins.

Cool them and serve. If needed do icing. Enjoy your unique cake.

Hours before her last breath…..

That’s how my granny and grandpa were.

A very big hai to everyone who are following my blog posts. It’s been long since I have posted. I was busy with Iniya, handling her growth phase and introduced Bharathanatyam to her. Yes, I was searching for a person who can be close to her while learning and when I came to know that there is a person in her friends gang, I felt the chance for her has arrived. Yes, my younger brother’s friends are her friends. For people saying that it’s early to introduce the art, for us #reneeandinnus it’s learning a new art. Along with this we are quite busy in upgrading our works on #iniyaworld to the next level.

Let’s move on to today’s topic. Today’s post can be a home made ready for cough and cold conveyed by my granny, during the hours before her last breath. Since his whole family was in our home in Tübingen I had the chance to be in Skype in his laptop after Sunday service. To my memory it was on 27th Dec 2015, we joined Skype in Thuckalay. Though my granny was tired after discharge from hospital, she joined us. The same silly fight for sweets and pickle happened and it ended in mins. Yes, though she should avoid them she was so crazy for them. Soon she asked me to give innus a millet drink, which can be introduced after six months. Though I was afraid she explained the way I should prepare.

The method involves the following procedure. A tea spoon full of ragi flour (homemade) in a tumbler, add water needed to soak the powder and wait till it gets soaked for 15 mins. When I was doing that she was in Skype giving me instructions with the same old tone….. when the powder gets soaked the water turns to the color of milk. Drain them carefully using white cotton cloth and boil them by stirring continuously in slow flame to avoid hard pieces forming. Remove them from stove or induction when it reaches the semi solid nature. I served them in a silver bowl to get cool down and started to feed her, placing on my lap. During this time the Skype got disconnected and everyone in India became unreachable. Since I felt it’s network issue and it’s late in India I decide to ring them in the morning. They hid that to avoid me from planning to reach India since his parents were leaving on Jan 1st. Hope you all have read the post on coffee love.

When the Skype got disconnected I heard her saying “do give her the diet regularly”. After a week I came to know that those were her last words… From that I worn innus the gold bangles which came all the way to #germany and gave her the ragi twice in a week. After six months it became normal diet for her. Gradually it became a custom for we three to drink a cup of ragi before breakfast. When winter knocked I used to add pepper and a pinch of powdered dried ginger while boiling and honey after it cools down. We should drink a cup of this before breakfast. This gradually reduced the cough and cold.

Those diys were the one which saved our time wasting on Skype and so on.
